{"id":48310,"date":"2017-04-03T14:50:09","date_gmt":"2017-04-03T12:50:09","guid":{"rendered":"https:\/\/www.shavei.org\/?p=48310\/"},"modified":"2017-04-04T12:19:21","modified_gmt":"2017-04-04T10:19:21","slug":"postres-de-pesaj-del-chef-chueta-pinjas-tony-pina","status":"publish","type":"post","link":"https:\/\/www.shavei.org\/es\/blog\/2017\/04\/03\/postres-de-pesaj-del-chef-chueta-pinjas-tony-pina\/","title":{"rendered":"Postres de pesaj del chef chueta Pinjas (Tony) Pi\u00f1a"},"content":{"rendered":"<p>Pinjas (Tony) Pi\u00f1a, es un famoso chef chueta, nacido en la Isla de Palma de Mallorca, Espa\u00f1a.<\/p>\n<p>La tradici\u00f3n jud\u00eda de la familia de Pinjas es tan extensa que incluso cuentan con un cuchillo especial que fue pasado de generaci\u00f3n en generaci\u00f3n, mediante el cual sol\u00edan realizar el tradicional faenado ritual conocido en hebreo como shejit\u00e1.<\/p>\n<p>Pinjas brind\u00f3 un curso de cocina anterior a pesaj abierto a los descendientes de anusim y a la comunidad jud\u00eda, el cual fue muy exitoso y todos retornaron a casa emocionado por las riqu\u00edsimas recetas que consiguieron y que podr\u00e1n preparar para el seder de pesaj.<\/p>\n<p>Pinjas quizo compartir las recetas tambi\u00e9n con ustedes, nuestros amigos alrededor del mundo, y aqu\u00ed se las traemos para que puedan chuparse los dedos junto con sus familiares y que tengan una festividad exquisita e inolvidable:<\/p>\n<p><strong><em>JAROSET AL ESTILO SEFARDI<\/em><\/strong><\/p>\n<p>INGREDIENTES.-<\/p>\n<p>800 gramos de manzanas<\/p>\n<p>50 gramos de panses<\/p>\n<p>150 gramos de d\u00e1tiles<\/p>\n<p>El zumo de una naranja<\/p>\n<p>100 gramos de az\u00facar<\/p>\n<p>\u00bd vaso de agua<\/p>\n<p>ELABORACI\u00d3N.-<\/p>\n<p>Pelar las Manzanas y cortarlas a dados.<\/p>\n<p>Retirar los huesos a los d\u00e1tiles y cortar la pulpa a dados<\/p>\n<p>Disponer\u00a0 todos los ingredientes en una cacerola a cocer.<\/p>\n<p>Dejar cocer a fuego moderado hasta que los frutos esten bien cocidos.<\/p>\n<p>Pasar todo el conjunto de la cacerola por un pasapur\u00e9s a ser posible por los agujeros m\u00e1s anchos.<\/p>\n<p>Una vez obtenido el pur\u00e9 poner de nuevo a cocer hasta espesar el conjunto, es obligado no parar de remover para evitar que no se agarre en el fondo de la cacerola.<\/p>\n<p>&nbsp;<\/p>\n<p><strong><em>JAROSET AL ESTILO ASQUENAZ\u00cd<\/em><\/strong><\/p>\n<p>INGREDIENTES.-<\/p>\n<p>\u00bd\u00a0 kilo de Manzanas ralladas<\/p>\n<p>150 gramos de nueces trituradas<\/p>\n<p>75 gramos de uvas pasas sin pepitas<\/p>\n<p>El zumo de un lim\u00f3n<\/p>\n<p>120 gramos de az\u00facar (puede ser moreno)<\/p>\n<p>\u00bd vaso de vino dulce<\/p>\n<p>Canela en polvo<\/p>\n<p>ELABORACI\u00d3N.-<\/p>\n<p>Mezclar todos los ingredientes en un recipiente de cristal.<\/p>\n<p>Guardar la mezcla en la nevera hasta su consumo, tapado con un papel film.<\/p>\n<p>&nbsp;<\/p>\n<p><strong>PASTEL DE ALMENDRA EMBORRACHADO CON JARABE DE NARANJA<\/strong><\/p>\n<p>INGREDIENTES.-<\/p>\n<p>6 huevos yemas y claras separados<\/p>\n<p>2 naranjas rallades<\/p>\n<p>150 gramos de az\u00facar<\/p>\n<p>Canela molida<\/p>\n<p>180 gramos de almendras molidas<\/p>\n<p>PARA EL JARABE<\/p>\n<p>2 vasos de zumo de naranja<\/p>\n<p>200 gramos de az\u00facar.<\/p>\n<p>ELABORACI\u00d3N.-<\/p>\n<p>Mezclar en un cuenco las yemas con el az\u00facar la naranja\u00a0 rallada, el az\u00facar y canela molida.<\/p>\n<p>Montar las claras de huevo a punto de nieve.<\/p>\n<p>A\u00f1adir las claras a la mezcla del cuenco junto con las almendras molidas.<\/p>\n<p>Verter la mezcla en un molde untado con un poco de aceite y salpicado con az\u00facar. Puede ser reemplazado por papel sulfurizado o similar.<\/p>\n<p>Cocer el pastel en el horno calentado a 180\u00ba entre 40 y 50 minutos, los ultimos 20 minutos bajar la temperatura del horno a 160\u00ba<\/p>\n<p>Aparte elaborar el Jarabe de naranja poniendo a cocer drante 2 minutos los 200 gramos de az\u00facar con el zumo de naranja.<\/p>\n<p>Desmoldear el pastel una vez cocido, disponerlo en un recipiente con paredes altes y verter el Jarabe. Guardar en nevera al menos 12 horas. Quedando listo para consumir.<\/p>\n<p>&nbsp;<\/p>\n<p><strong>TISHPISHTI (Pastel de nueces y almendras tipico de la comunidad serfard\u00ed turca)<\/strong><\/p>\n<p>INGREDIENTES.-<\/p>\n<p>7 huevos batidos<\/p>\n<p>Una naranja (el zumo y la piel rallada)<\/p>\n<p>175 gramos de az\u00facar<\/p>\n<p>Canela molida<\/p>\n<p>140 gramos de almendras molidas<\/p>\n<p>140 grams de nueces molidas<\/p>\n<p>PARA EL JARABE<\/p>\n<p>200 gramos de agua<\/p>\n<p>200 gramos de az\u00facar<\/p>\n<p>Una cucharada de agua de rosas<\/p>\n<p>ELABORACI\u00d3N DE JARABE.-<\/p>\n<p>Poner a cocer en una cacerola el az\u00facar con el agua durante tres minutos.<\/p>\n<p>Retirar del fuego y a\u00f1adir el agua de roses.<\/p>\n<p>Guardar el Jarabe en la nevera.<\/p>\n<p>ELANBORACI\u00d3N DEL PASTEL.-<\/p>\n<p>Mezclar en un cuenco todos los ingredientes<\/p>\n<p>Verter la mezcla en un molde untado con un poco de aceite y en harinado con un poco de harina de matz\u00e1.<\/p>\n<p>Cocer en el horno calentado a 180\u00ba entre 40 y 50 minutos, bajar la temperatura del horno los ultimos veinte minutos a 160\u00ba<\/p>\n<p>Retirar el pastel del horno una vez cocido, desmoldera el pastel y cortar lo en porciones en forma rombo.<\/p>\n<p>Disponer los trozos en un recipiente de paredes altas<\/p>\n<p>Verter el Jarabe sobre las porciones del pastel y dejar que se empapen bien por ambos
